Position Summary: 

We're looking for a BBQ professional who lives and breathes smoke—someone ready to take their craft to the next level by leading barbecue operations across multiple locations. This isn't just about managing pits; it's about becoming the guardian of a Houston legacy while building your own reputation in the Texas BBQ scene.

As our Pitmaster, you'll be the maestro orchestrating smoked perfection across our locations, mentoring the next generation of pitmasters, and ensuring every brisket, rib, and sausage that leaves our kitchens carries the soul of authentic Texas barbecue. You'll have the creative freedom to innovate while honoring the old-school techniques that have made us a Houston institution since 1977.

What You'll Do: 

  • Command the Fire – Oversee BBQ and smoked meat operations across multiple locations, ensuring every pit produces consistently strong results 
  • Build the Playbook – Develop and refine SOPs for smoking, meat preparation, and seasoning that balance tradition with innovation 
  • Develop Future Legends – Train, mentor, and inspire kitchen staff and pit crews, passing down the craft while encouraging their growth 
  • Run Tight Operations – Monitor food costs, portion control, inventory, and waste management without sacrificing quality 
  • Stay Ahead of the Curve – Keep us compliant with food safety regulations while maintaining the authentic, no-shortcuts approach BBQ demands 
  • Drive Innovation – Collaborate with our culinary team to develop seasonal menu items, limited-time offerings, and dishes we can be proud of
  • Master the Equipment – Maintain and troubleshoot smoking and holding equipment, grills, and all related cooking apparatus—and make recommendations for upgrades that elevate our game 
  • Source the Best – Build relationships with vendors and suppliers to secure premium meats, seasonings, and wood that give us an edge 
  • Lead by Doing – Conduct routine location inspections, roll up your sleeves when needed, and embody the work ethic and passion that defines great barbecue 
  • Set the Standard – Foster a culture of teamwork, craftsmanship, and pride in authentic barbecue that attracts and retains top talent
